The creative Avignon chef Vincent Marcy, who worked at La Mirande (Avignon), Bouillon Pigalle (Paris), and Grand Véfour (Paris), is the resident chef of the Totem kitchens.
Inspired by the traditional French cuisine of Auguste Escoffier, great chef of the 20th century, Vincent Marcy concocts and offers with his team modern and generous cuisine at democratic prices.
Totem's cuisine is closely linked to our terroirs, in order to offer simple, tasty and comforting homemade dishes.
In addition, culinary diversity will be highlighted in order to vary tastes and experiences.
Thus, seasonal supply, as local as possible, and in the most sustainable agriculture possible is obvious and a permanent effort for us.
